Early hand harvested, immediately custom cold pressed and variety blended, Castelas is best described by a distinct aroma of freshly cut grass, consummate finesse on the palate with hints of artichokes and almonds, and a slight pepperiness. Deliberately left unfiltered, which explains its rich golden appearance and possible harmless sediment, this process protects the Castelas personality, originality, and the antioxidants the product naturally contains.
