Acetaia-Leonardi Juniper Balsamic
maker: Leonardi Giovanni
Founded in 1871 in Magreta di Formigine, just a few miles to the north of Modena, the Acetaia-Leonardi is headed by Giovanni Leonardi and his son, Francesco. A testament to their skill and dedication to tradition, the Leonardis’ products are consistently rated outstanding within the Consortium. Sought after in the Roman Empire, today Juniper Balsamic is quite rare due to the scarcity of the juniper tree which is now protected by law. Leonardi continues to maintain 80 barrels of old juniper, aging his precious product exclusively in these barrels for a minimum of 20 years. The juniper casks yield an herbaceous, slightly spicy flavor that contains hints of honey. Perfect for savory foods, drizzle it on grilled flank steak, pour it over salami, or even a shard of Parmigano-Reggiano cheese.
