Produced in the cellars of a medieval fortified village in the Chianti hills of Tuscany, Castello di Volpaia Aged Red Wine Vinegar is extracted from carefully selected wines of the region by the traditional “truciolo” method. Percolated through chips (called truciolo) of oak and chestnut, this method transforms the natural alcohol of the wine into the acetic acid of vinegar while enhancing the wine’s complex bouquet. Reaching its full maturity after a long, slow barrique-aging process in oak and chestnut barrels, Castello di Volpaia Aged Red Wine Vinegar is perfect for salads, meats, strawberries, and mangoes.
